Flapjacks Recipe – Easy Recipe For The Best Fluffy Flapjacks

This flapjacks recipe makes 20 medium sized flapjacks – perfect to feed our family of 4. This recipe is a huge hit in our home, my kids are always begging me to make it.

It’s interesting how people from different countries have different names for things. Americans call these pancakes (or as my kids call them Matilda pancakes) and what we call pancakes they call crepes.

Flapjacks recipe

Ingredients

  • 240g flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 50g sugar
  • 1 cup milk
  • 2 eggs (separated)

Method

Mix the flour, salt, sugar, milk, and egg yolks in a bowl. In a separate bowl beat the egg whites to soft peaks and fold into the batter.

Add a tablespoon of the flapjack mix to the pan and fry on each side until golden brown.

Tips & Tricks

Make sure not to overmix the mixture. You can serve these flapjacks with cinnamon and sugar, syrup, or jam, butter and whipped cream. Feel free to add fruit or any other topping that you enjoy. My favourite way to eat these flap jacks is with butter, Creative Cuisine Pantry blueberry jam, and whipped cream. My kids love spreading chocolate spread on their flapjacks. You can also try it American style with bacon and syrup.

      It is a very easy recipe, you should try it. I don’t usually buy any premixed goods, I quite enjoy the process of baking.

      I never bother with premixes also, waste of money lol

      • I think it is a lot more pricey to use premixes, but also I like to make a variety of things. If I have basic ingredients at home I can make whatever I want when I want.
