Sweet Corn Fritters Recipe by Grace Stevens

Oh my word but Grace Stevens makes everything look so super simple doesn’t she? I love sweet corn fritters and I have always wanted to give them a go so I was so chuffed to find this sweet corn fritters recipe on her channel!

I am making these later to go with the casserole that is cooking in my slow cooker for supper tonight! I am always looking for something quick and easy to go along with my slow cooker meals since the whole point of me cooking in the slow cooker is so that I don’t have much to do at supper time.

What I also love about this recipe is that it uses things I would normally have in my kitchen anyway so no need to rush out and buy anything special for this!

These will make an amazing side for soups in winter and will go well with a salad and a braai in summer. These are sure to be a hit with the family.

Here are the sweet corn fritter ingredients:

  • 1 cup grated cheese
  • 1 tin sweet corn
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 egg

Then you just mix it all together and like Grace said you can add in anything extra to make it more interesting such as parsley or mustard. Fry your sweet corn fritters in a non-stick frying pan until they are golden brown.

    I love fritters and whenever I tried making sweet corn fritters at home it was a disaster. I could never get the mixture correct, it used to always split apart whilst frying.
    This recipe seems relatively simple and worth a try.

    Fritters are such wonderful lunch box ideas for the little one and is a healthy snack for them.
    Now with it being winter, these would be an ideal snack compared to cold snacks such as puddings.

    I wonder if it would be advisable to make extra and freeze away?
    I always love making extra pies, once I start I make extra and I freeze them for easy dinner on weekdays.

      You are right @ron03 – these will be great in lunchboxes! I never thought of freezing them. I am such a fan of freezing things then when I have one of those days where everything gets too much I can just whip something out of the freezer and serve it 🙂 I don’t know if they will freeze well but I would think they would, I will try freezing some next time I make them.

    I am certain that these can be frozen, as they are similar to freezing of pies.
    I have to agree that it works wonders having these quick bake items available in your freezer for any time that you need to prepare a quick meal and have inadequate time.
    I personally feel that the preparation of ingredients take longer than the actual process of cooking for most recipes that I have attempted to make recently.
    Quick and tasty meals are always appreciated by me, as I hate spending loads of time daily in the kitchen after work, I rather spend the extra time with my little one.
