I absolutely love malva pudding and when my hubby bought some recently after not eating it for a very long time I decided it was time to try my hand at making it myself and I was so happy with the result. My family loved it too. It was easy to make and came out lovely.

Malva Pudding Recipe
Ingredients:
- ¾ cup of sugar
- 2 eggs
- 1 tablespoon apricot jam
- 1 cup flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- t tablespoon butter
- 1 teaspoon vinegar
- ⅓ cup milk
For the sauce:
- ¾ cup cream
- 1 cup butter
- ¾ cup sugar
- ⅓ cup hot water
- 2 teaspoon vanilla essence
Method:
- Grease your dish and heat oven to 180°C
- Beat the sugar and eggs with an electric beater until it is a thick lemon colour
- Add the apricot jam and mix through
- Melt the butter and add the butter and vinegar to the mixture.
- In a separate bowl sieve and mix your flour, salt and baking powder then add it to your wet mixture and beat with an electric beater
- Bake for 30 minutes until it is brown and well risen
- While it is baking melt the sauce ingredients in a pan and stir well
- Pour the sauce over the pudding when it is still hot and leave it to stand for a while so that the sauce can sink right into the pudding
- Serve hot with ice cream or custard
This recipe came out delightfully well and will make a fantastic dessert for a braai or any other occasion.
